Apple, Spinach & Goat Cheese Salad with Balsamic Dressing

We both used to be pretty "meh" about salads, but then we realized it could be more than a head of lettuce and ranch dressing. We love this salad. It's simple, tasty, easy to make, and healthy. What's not to love?



Apple, Spinach & Goat Cheese Salad with Balsamic Dressing 

(1-2 servings)


    Greens & Toppings
1  bunch of spinach
1  bunch of kale, broken off the stalk 
2 apples, chopped
12 strawberries cut up into halves or quarters
2 handfuls of almonds
1  block of goat cheese, broken up with a fork


    Balsamic Dressing
1 tablespoon balsamic
1/4 cup olive oil
salt to taste, a couple pinches
pepper to taste, a pinch

Since this is a salad, it can basically be done in any order as long as it's mixed together at the end. Add the spinach and kale, mix together in a bowl.

Chop the apples and strawberries into bite-size bits. Add to the bowl and mix. Cut the almonds in half. A few minutes in the toaster oven make the almonds even more delicious.

Chop up the block of goat cheese and add to each personal bowl. To make the dressing, simply put the ingredients listed above into a cup and mix, then drizzle on top of the salad. Buen provecho! That's the Spanish version of Bon Appetit, by the way.
